Why it is so dangerous

Liquid nitrogen is extremely cold, about −196°C, and will instantly freeze any tissue it touches, causing severe “cold burns” and deep internal damage to the mouth, throat, esophagus, and stomach. Health authorities report cases where people who swallowed liquid nitrogen or nitrogen-containing drinks have suffered stomach perforations (a torn, burst stomach) requiring emergency surgery and can even die.

As it warms inside your body, liquid nitrogen rapidly turns into gas and expands to more than 700 times its liquid volume, which can generate enough pressure to rupture the stomach or other parts of the digestive tract. Because of these risks, agencies like the U.S. FDA advise consumers to avoid eating or drinking products that still contain liquid nitrogen or are served while they are still “smoking” from freshly added nitrogen.

What is safe instead

Food or drinks that were cooled with liquid nitrogen can be safe only if all of the liquid nitrogen has completely evaporated before serving, leaving no cold liquid or active “smoke” in the glass or on the food. If you ever see a “nitro” snack or cocktail that is still bubbling or emitting dense vapour where you would actually swallow the liquid, do not consume it and ask the staff to remove it or let it warm until the effect stops.
