how to make panjiri

Panjiri is a traditional North Indian sweet made by roasting whole wheat flour in ghee, then mixing it with powdered sugar, nuts, and raisins. The flour is roasted until golden and aromatic, ghee and nuts (such as cashews and almonds) are added and roasted further, then powdered sugar and raisins are mixed in. It is served as a dry sweet sometimes with warm milk and can be stored for weeks.

Basic Ingredients:

  • Whole wheat flour (1 cup)
  • Ghee (about 4 tablespoons)
  • Powdered sugar (½ cup)
  • Cashews or almonds (15-18 nuts)
  • Raisins (15-18)

Basic Steps:

  1. Powder the sugar and keep aside.
  2. Roast whole wheat flour in ghee on low flame, stirring often, until golden and nutty aroma arises (about 9-12 minutes).
  3. Add ghee and nuts, roast further for 5-6 minutes.
  4. Remove from heat, add powdered sugar and raisins, mix well.
  5. Let it cool and store in an airtight container. Serve plain or with warm milk.

There are variations where edible gum (gond), semolina, or other nuts and seeds are added, and the recipe can be adjusted to taste or preference.
