To unpair your Apple Watch from your iPhone, follow these steps:
- Keep your Apple Watch and iPhone close together.
- Open the Apple Watch app on your iPhone.
- Tap the "My Watch" tab, then tap "All Watches" at the top.
- Tap the info button (ⓘ) next to the watch you want to unpair.
- Tap "Unpair Apple Watch."
- For GPS + Cellular models, choose whether to keep or remove your cellular plan:

If you don't have the paired iPhone, you can erase your Apple Watch directly on the watch by going to Settings > General > Reset > Erase All Content and Settings, but Activation Lock will remain until you enter your Apple ID credentials during setup
