High-fructose corn syrup (HFCS) is a liquid sweetener made from corn starch. It is a mixture of two monosaccharides, fructose, and glucose, with 55% fructose and 45% glucose. Compared to corn syrup, which is 100% glucose, HFCS is "high" in fructose. It is cheaper than sugar, has better flavor enhancement, and longer shelf life. HFCS is used in many processed foods and beverages as a sweetener. However, consuming large amounts of HFCS can lead to serious health issues, including obesity, diabetes, and heart disease. The fructose in HFCS can cause health issues if eaten in excessive amounts. Thus, it is recommended to limit the consumption of all added sugars, including HFCS.
