Scallops are a type of bivalve mollusk, meaning the interior muscle is surrounded by two shells similarly to oysters, mussels, and clams. They are related to clams, mussels, and oysters and thrive in the cold waters of the ocean. Scallops are a cosmopolitan family of bivalves found in all of the worlds oceans, although never in fresh water. They are one of the very few groups of bivalves to be primarily "free-living", with many species capable of rapidly swimming short distances and even migrating some distance across the ocean floor. Scallops are highly prized for their delicate texture and taste. When cooked properly, like a quick sear in a hot pan, they are deliciously sweet and tender, needing very little fat or added flavor.
