Lamingtons originated in Australia, specifically in Queensland, around the late 19th to early 20th century. They are named after Lord Lamington, who was the Governor of Queensland from 1896 to 1901. The cake is believed to have been created either by a maid of Lord Lamington or by his French-born chef, Armand Galland. The most popular story describes the invention as an accidental creation when a sponge cake was dipped in melted chocolate and then rolled in desiccated coconut to prevent messy fingers. The earliest known written reference to lamingtons dates back to 1900 in the Queensland Country Life newspaper, where it was called “Lady Lamington’s Chocolate-Coconut Cake”.
