TCS foods, or Time/Temperature Control for Safety foods, are foods that require specific time and temperature controls to prevent the growth of harmful bacteria that can cause foodborne illness. These foods typically have high protein and moisture content and are neutral or slightly acidic. Common examples of TCS foods include:
- Raw or cooked meat, poultry, fish, and shellfish
- Dairy products like milk, cheese, butter
- Eggs
- Cooked vegetables and potato dishes
- Cut fruits such as melons and tomatoes
- Raw sprouts and cut leafy greens
- Protein-rich plant foods such as tofu
- Garlic-in-oil mixtures
These foods must be kept either refrigerated, frozen, or held at a sufficiently hot temperature to prevent bacterial growth.
