Processed meat is considered bad for health because it is associated with increased risks of several chronic diseases, including heart disease, various cancers (especially bowel/colorectal cancer), type 2 diabetes, and high blood pressure. The main reasons for these risks include:
- Chemical Preservatives: Processed meats often contain nitrates and nitrites, which are preservatives that can form cancer-causing compounds called nitrosamines, especially when cooked at high temperatures.
- Haem Iron: Red processed meats contain haem iron, which can promote the formation of harmful compounds that damage the bowel lining and increase cancer risk.
- Saturated Fat and Salt Content: These raise LDL cholesterol and blood pressure, contributing to heart disease and stroke risk.
- Cooking Methods: High-temperature cooking of processed meats produces additional harmful chemicals that can damage cells.
Studies show a consistent, strong link between long-term high consumption of processed meat and increased risk of heart disease, cancer, chronic obstructive pulmonary disease, and type 2 diabetes. Even small amounts, such as one hot dog a day, may increase these risks significantly.
