It is widely believed to have been created either by accident or necessity in the kitchen of Lord Lamington, the eighth Governor of Queensland, or by his French-born chef Armand Galland. One popular story is that a maid accidentally dropped a sponge cake into melted chocolate, and Lord Lamington suggested rolling it in desiccated coconut to avoid messy fingers. Another account credits Galland with inventing the treat by dipping leftover sponge cake in chocolate and coconut to serve unexpected guests. The earliest printed recipe for lamingtons appeared in the Queensland Country Life newspaper in 1900, initially called "Lady Lamington’s Chocolate-Coconut Cake" before it became popularly known as the lamington.
